Highlander is the newest cheese from Jasper Hill Farm and takes its name from Greensboro's classic 'back road.' The raw cow's milk in this cheese is sourced exclusively from Jasper Hill's cows and is blended with fresh raw goat's milk from Bridgman Farm, a new partnership. Highlander's recipe is inspired by traditional French and Swiss Raclette. Its semi-firm, elastic texture makes for a fine table cheese and excellent melting properties. The traditional way to enjoy the cheese is melted over potatoes with pickles and cured meat alongside. On its own, the cheese has notes of speck, macadamia nuts, and butter with lingering washed-rind aromas.
