Raclette du Valais AOP is the most original of all raclette. The milk comes exclusively from the Eringer cows – a sturdy cow breed native to the Valais in Switzerland. Raclette de Valais is raw milk and this one is aged about four months. Bruson is made by Eddy Bailifard. It is an amazing melter and perfect for the traditional dish raclette. Raclette du Valais is beautifully balanced with flavors of beef broth and sweet cream.
