Wrångebäck is Sweden's oldest brand of cheese and is made on Almnäs Bruk, an 8,800-acre farm in Sweden founded by monks in 1225. After World War II, cheesemaking was discontinued on the farm, and the farm began to sell fluid milk to the commodity market. In 2008 as milk prices declined, Almnäs Bruk turned back to cheesemaking and revived the recipe for Wrångebäck. Wrångebäck is unique, somewhere between an alpine style and a cheddar. Flavors are deep and rich with notes of dark toffee and cream. The texture is dense and toothsome and a bit crunchy from the tyrosine (protein) crystals.
