Beaufort is a raw cow's milk cheese from the Savoie region of France. Often called "the prince of Gruyeres," it is a classic mountain cheese. Its texture is dense and smooth, and its flavors are cooked cream, baked potato, hay, and red fruit. Beaufort is made throughout the year, but we think the best wheels are made using summer milk. These summer wheels are complex and were aged by renowned Savoie affineur Joseph Paccard aged our wheel.
