Kunik is a decadent triple crème produced by Sheila Flanagan in the Adirondack region of New York. It's made with goat's milk, but then to up the decadence, she adds some cow's cream. When young Kunik is mild and buttery with a tangy, crème fraiche flavor, as it ripens, it develops notes of mushroom and earth and more assertive goat flavor. Each piece is at least 1/2lb.
