This Pecorino Romano is the only one left still made in the countryside outside of Rome. It is handmade from sheep's milk in large 65-pound wheels using ancient traditions. Fulvi Pecorino Romano has a bold, assertive flavor with a pleasant salty note. It has a dense cake-like texture and is the critical ingredient in the classic pasta dish Cacio de Pepe.
