Produced in the Gevrey-Chambertin area of Burgundy, L'Ami du Chambertin is similar to Epoisses. As it ages, it is washed in Marc de Bourgogne, developing a sticky orange rind that is quite aromatic. The interior is custardy and, when ripe, becomes spoonable. The flavors are milky, vegetal, and sweet, with a hint of bacon.
